# Directions:

- Lay out the sourdough slices. Spread butter evenly on one side of each slice. If using, spread a thin layer of mayonnaise on the other side for extra crispiness.
- Place two slices, buttered side down, on a clean surface. Layer each with 1 slice cheddar, 1 slice provolone, and half the shredded mozzarella. Top with the remaining bread slices, buttered side up.
- Heat a large skillet or griddle over medium-low heat. Place the sandwiches in the pan. Cook for 3–5 minutes per side, pressing gently, until the bread is golden brown and the cheese is fully melted. Flip carefully to avoid spillage.
- Transfer to a cutting board, let rest for 1 minute, then cut and serve hot.
