Pineapple Basil Agua Fresca (Printable)

A bright blend of pineapple, basil, lime, and subtle sweetness for a cool, refreshing drink.

# What You’ll Need:

→ Fruits & Herbs

01 - 1 medium ripe pineapple, peeled, cored, and chopped (approximately 4 cups)
02 - 1/3 cup fresh basil leaves, loosely packed
03 - 1 lime, juiced

→ Sweetener

04 - 2 to 3 tablespoons agave syrup or honey, to taste

→ Liquid

05 - 3 cups cold water

→ Garnish

06 - Pineapple wedges
07 - Fresh basil sprigs
08 - Lime slices
09 - Ice cubes

# Directions:

01 - Combine chopped pineapple, basil leaves, lime juice, and sweetener in a blender. Add 2 cups of cold water and blend on high speed until completely smooth.
02 - Pour the blended mixture through a fine mesh sieve or cheesecloth into a large pitcher. Press solids gently to extract all liquid and remove excess pulp.
03 - Stir in the remaining 1 cup of cold water. Taste the mixture and adjust sweetness according to personal preference.
04 - Refrigerate for at least 30 minutes until well chilled, or serve immediately over ice cubes.
05 - Pour into serving glasses and garnish each with pineapple wedges, fresh basil sprigs, and lime slices if desired.

# Expert Advice:

01 -
  • It tastes like someone who knows you made your favorite drink, without any fussing or fancy technique.
  • The basil surprises people every single time, turning what could be ordinary pineapple juice into something memorable.
  • You can make it in minutes, which means you can actually serve it when friends drop by instead of saying you'll make it next time.
02 -
  • Straining is non-negotiable if you want that silky, refined texture; blending alone leaves it grainy and the basil pieces get between your teeth in an unpleasant way.
  • Ripe pineapple needs barely any sweetener, but underripe pineapple will need more, so taste as you adjust instead of adding everything at once and regretting it.
03 -
  • If you don't have a fine mesh sieve, cheesecloth works perfectly and honestly gives you more control over how much pulp makes it through.
  • Add the sweetener to the blended mixture before straining rather than after, so it dissolves completely and you get an even taste throughout instead of concentrated pockets of sugar.
