# What You’ll Need:

# Directions:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.

04 - In a heatproof bowl, whisk together egg yolks, 1/4 cup sugar, lemon juice, and lemon zest. Position bowl over a pot of simmering water as a double boiler. Whisk constantly for approximately 7 minutes until mixture thickens noticeably. Remove from heat and cool to room temperature.
05 - In a clean, dry bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/4 cup sugar while beating until stiff peaks form.
